The secrets of the Bar-B-Que Shack

Posted By on Fri, Aug 29, 2014 at 10:42 AM

In the latest Eat Arkansas video, Gary Green, owner of Jacksonville's The Bar-B-Que Shack, talks about what makes his restaurant special, including the unheralded importance of cumin in chili and a secret seasoning that a previous owner earned by working for its inventor for free for two weeks. Green is a character to say the least.

You've may've noticed this elsewhere on our site, but just in case, here's our previous video in the series, a collaboration with Greg Spradlin and Camp Friday Films: We visit Charlotte Bowls at Charlotte's Eats and Sweets in Keo, Ark., to talk about her famous mile-high meringues and where she got her coconut pie recipe.
