Gourmasian takes a lot of inspiration from David Chang's Momofuku restaurant. I know Chang's recipe for ramen has a porky, smoky broth, and I know that Justin is using the same kind of bacon that Chang uses (Benton's).

If you thought that "pork was the star" they probably did it right.

I had the Southern Gourmasian ramen today, and I thought it was excellent, but I'm not an expert on authentic ramen. The pork is really the star in this dish, and the description above is apt - the whole dish has a "smokey" quality. I almost would describe it as a BBQ (smoke, not sauce) noodle soup.

Heard that Southern Gourmasian is going to start doing ramen. From their Facebook:

"We'll be bringing u guys some new dishes this month starting with a ramen bowl today! Come try it, smokey ramen broth, noodles, pork shoulder, poached egg!"

Is there any question as to whether this will be tasty? Shouldn't be, everything they do is excellent.
