Little-known Riverfest treat

Looking for a Riverfest treat beyond the ubiquitous corn dog, funnel cake or turkey leg? Try Fat Sam's, which features the Cajun delights of a part-time caterer who -- last I heard -- was an assistant football coach at Hall High. This will be his second year. Not sure what all he'll be serving, but his jambalaya, gumbo and etoufee are truly world-class, a huge step up from typical LR restaurant fare. He will be set up on the Little Rock side in the parking lot main food area, not exactly right under the Main Street Bridge, but not far from it. Tell ol' Big Fun what you think of it. And, while we're at it, anybody got any Riverfest food suggestions that are off the typically well-beaten festival food path?
