The soy report

Think all soy sauce is created equal?  You would be wrong.  Most of us have grown up on one sort of Japanese sauce.  Chinese soy sauce has a different flavor.  My two favorites are light and dark.  The light refers to the flavor and not the salt content.  It has a subtle, slightly sweet taste.  The dark has a much more intense rich flavor.  As you pour it you can see that it clings slightly to the side of the bottle.  Mushroom flavored soy is the secret to Dad's incredible fried rice.  The bottles in the picture are available in our local Asian markets for about $2.50 or less each.  My nine year old can tell the diference and so will you.
