Beantown breakfast

Kat Robinson of Tie Dye Travels has been gallivanting in Boston, where a bodacious breakfast with stuffed French toast and honest-to-goodness corned beef hash drew her lens.

Kat inspired me to make
french toast this morn
but it sure didn't look
like this nor, I'm sure,
taste like that did....
yummy

This weekend, I made the best frech toast I've ever had anywhere....

I just beat a couple eggs with some cream and, on a whim, decided to add some coconut extract. Only I couldn't find any, so I used some Coconut Creme Coffeemate that I found buried in the cupboard.

Then I cut some french bread rounds about 1 1/2 in thick.

They cooked up perfectly. I had plenty of heavy cream left over some I made a small batch of whipped cream with Splenda in place of sugar.

I plated each small piece of toast with a dollap of cream and blueberry preserves on top and then half a banana on the side.

BEST. FRENCH. TOAST. EVER!!
