Enchilada help sought

A mention here about 3 a.m. enchiladas back in the 1970s at the late Town Hall in downtown North Little Rock -- a blood relative of Mexico Chiquito of yore -- has sent one reader on a so-far fruitless quest for that enchilada recipe.

Can anyone help?

Can't help there, but if we're sending APB's for enchilada recipes, I'd love to get the recipes from the Breadbasket that operated on Hiway 10 in the 80's and 90's. Loved that place and still miss it, especially their spinach enchiladas and bread pudding.

That should be pretty easy. The woman who originally opened the Breadbasket wrote a Master's thesis at UALR about her experience. Recipes are included.

I've been meaning to track it down in the University library for a couple years.

Mmmmm Breadbasket. Still miss it so.

Bruised and battered
