Meet Your Waiter
Obviously, if you are reading this blog, you love food. You think about it, you read about it, you probably even dream about it. As foodies, we care deeply about our food and where it comes from. We wonder about the farms that produce what we eat. We wonder about the chefs that can create dishes that we only wish we could make ourselves. But how often do we wonder about who is serving our food? Well, Meet Your Waiter hopes to change all that. Here, we will highlight those unsung heroes of the restaurant biz, without which your food would never get from that brilliant chef in the kitchen all the way to your table. Some things you learn about them may surprise you. Other things you may have had pegged the minute you laid on eyes on them. Either way, meet your waiter this week:

Name: Kirsten Caldwell
Age: 21
Where she works: Sticky Fingerz Rock n’ Roll Chicken Shack
Favorite dish she serves: The Sticky Fingerz Salad, which has fried chicken strips, blue cheese, and pecans.
Best part about waiting tables: Meeting new people. She says, “When people are drinking, they’re always really nice.”
What you may not know: Kirsten is an avid animal lover with a great big heart (and hopefully a great big backyard). She has recently adopted 3 stray dogs.
Her future plans: Kirsten is an art student studying ceramics at the University of Arkansas in Fayetteville. She is taking a much-needed break from school but she plans to return to Fayetteville in the spring to finish up her degree.
If you want your favorite waiter profiled here, leave a comment and let me know where they work and why they are awesome.

WOW!! She makes me wish I was 21 again.
I go to Sticky's a few times a month (hey, I work downtown) and I think the food is OK.
The 2 big issues for me are 1) having the smell of cigarette smoke creep out of the smoking section and smell up my food, and 2) having to wait 15-30 minutes for a seat in the non-smoking section when the smoking section is empty (or only have one table full). Turn the smoking section into a non-smoking section (at least for lunch) and I bet they would make more money.

Hey, they don't have to even have a non-smoking section if they allow smoking. THey made the choice to stay a smoking establishment, but have made some effort to accommodate non-smoking clients.
If they did turn the stage half into a non-smoking lunch, would you be comfortable since the residue and remainder of the rock-n-roll night before would linger? Odds are it would be more invasive for you than the smoke creep into non-smoking.

Brittany at Mickie's Bluefish Grill in COnway does a really good job in taking care of the guests needs while not being pushy or unattentive.

I have to agree with Joel on the smoking complaint. I can understand why non-smokers are irritated with the smell of cigarettes, but on the whole, that battle is being won all over the country as most places are going smoke-free as it stands.
Food's not that good at Sticky Fingerz, anyway (And really? Do they have to spell it with a 'z'? Sorry, pet peeve). Just your run-of-the-mill bar food you can find anywhere. Boring.

Oh, and off the subject of waiters because not many come to mind that are still employed as servers (Lauren, formerly of Ferneau, was the best server EVER), I will throw in a vote for my favorite bartender.
Peter at Ferneau is the shit, hands down. Mitch is great, too.
Back in the old school days, though, I think best bartender in Little Rock would have been a two-way tie between Jeff Ferneau and Lee Edwards. Lee Edwards gets a slight edge just for being Lee Edwards. But only a slight edge.

I just don't think handing off a sandwich or salad makes you a waiter....nor so sliding you a Miller Lite makes you a bartender.
A sign of the times I guess.

Right on, Food Dude. Again, preaching to the choir. At least to my choir, that is.
I think the last two choices for the Meet Your "Waiter" posts have been poor, sorry. Half the time they merely take the orders and it's the busboy who delivers the food. On the other hand, you always get what you pay for.
If you haven't tried Ferneau yet, check it out. The service ain't no joke. And that includes bartending. Those guys make a mean basil-lemon-drop martini. And I don't even like martinis. It's the real deal.
Ask for Peter.
Joel, I'm waiting for your input...

I'll have to try Ferneau sometime soon. Thanks for the tip.
If you're ever in Hot Springs try Rolando's if you haven't already. They have one of the best patio's in the state and their lunch menu is basically the same as the dinner menu but half the price. Great food presentation....the drinks are mixed very well...the owner is nice and the service has always been good. I try to go every time I'm in town. Highly suggested for a non-pretentious, come-as-you-are kind of place!!!

Sorry, JenJens. I was running around getting ready for Bond night this evening.
FD, JenJens and I agree that Ferneau is the single best restaurant in the city worth every single penny you plunk down. Mitch is a fantastic bartender at Ferneau, but Peter is far and away top notch.
Back in the day, I agree that Lee & Jeff were two of the top notch in the city; though I will throw some nods to Blair at Baci. Lee came up with the "Impeach Bush" drink incorporating Bushmills whiskey, peaches, and mint and at the time I was not a big Irish Whiskey person. First place in town I can remember stocking Plymouth Gin. But now that Lee has moved out of the business, I will need to ponder the best bartender question. Both Peter and Mitch are up there. Conan is one of the best, but rarely can you encounter him when he has the time to do more than sling standards. Grace mentioned Annie from Flying Burrito on a previous thread. I had a wonderful conversation with her about cocktails, but have never imbibed from her pour. Do I count signature drinks or use a standard suite of drinks ...
While I ponder the bartending questions, I will add that John was always fantastic as a server as well, though he and Lauren approached it from slightly different angles. Two sides of the same coin in many respects. True, I have known John since sometime in the mid or early 90s.

Duh!
Totally forgot about John. Yes, agreed, Joel. John was an outstanding waiter and is an outstanding person.
Of course Lee would come up with the Impeach Bush drink. Brilliant. And Blair's got skills, too. We used to hang tough back in high school, but she is a great bartender.
