Festival of Leftovers.
Now that the holiday has officially passed, how are you going about consuming your Thanksgiving leftovers? Chris Finklea's idea of a post-Thanksgiving lunch:
"The Ultimate Thanksgiving Sandwich... Turkey Sandwich with Dressing, cranberry sauce, sweet potatoes with marshmallows, with perhaps some giblet gravy if you don't mind it messy. It is a bit of a Dagwood of a sandwich, but it is the distillation of a Thanksgiving meal."

Mix mashed taters, stuffing and cut up turkey.
make into patties.
Dredge in flour.
Pan fry in a bit of oil.
Cover with leftover gravy if you have it.
Yummy.

Being as I'm still a young'un & just contribute a little (if at all) to the dinner, I take home negligible leftovers. However, most years my mom makes a traditional sausage stuffing (NOT CORNBREAD) for me & her.. well this year the sausage was accidentally super spicy so I took home almost all of the leftovers (my cousin - in law, it just gets confusing here - was down with the spicy and took a bit). I don't mind having extra stuffing.. it's pretty much my favorite part of the meal, considering how poorly my relatives usually treat the turkey.
Anyway, as far as leftover recipes are concerned, I took some advice from my favorite bloggers at Serious Eats & pan fried some stuffing into almost a hash cake and topped it with a fried egg. yummm :)
