As a non-vegan, I have trouble contemplating a life without meat, eggs, butter and all the other delicious animal derivatives, but my friend Katie Douglas' new Tumblr, The Lazy Vegan, makes a meatless world look pretty good, with recipes for dishes like Pan-Fried Polenta Cakes with Roasted Asparagus (above), Seitan Stir-Fry with Grilled Pineapple and Broccoli and Cinco de Mayo Pizza.

The gist is that she's preparing simple, tasty vegan meals that even her toddler likes.

Add it to your blog roll (or Tumblr feed), veggie lovers.
