Chew on this: Gooey butter bars from The Cupcake Factory

Even if your bakery is named “The Cupcake Factory,” it’s probably best you know how to whip up a few other items aside from cupcakes. I mean, what if the zombie apocalypse is upon us and in addition to having a desire for human flesh, these same zombies have an insatiable desire for cupcakes. Seems reasonable, and you don’t want too many of those things hanging around your shop, better do away with them. Conversely, it may be that (and I cannot imagine the warped, twisted universe in which this might occur) some of your customers don’t like cupcakes. It might be a decent idea to offer a few non-cupcake items. Luckily, The Cupcake Factory at Chenal has got this one handled.

Recently on one of my regular dozen-cupcake drop-ins, as I was brooding over how to best fill my box, I was intrigued by a number of the non-cupcake items being presented. I convinced the ladies running the shop to allow me substitute one such item for a cupcake within my dozen…and it so happened that this item outshined the whole lot. Though it sounds as if it were named by a snaggle-toothed, six-year-old girl with pigtails, the Gooey Butter Bars are sophisticated enough for any discerning palate.

The butter bars as simplistic, two-layered, and anything but lavish. They are not piled high with three inches of frosting, nor are they adorned with chocolate chunks, sprinkles, and candy pieces. A crumbly bottom crust is densely packed and rich with butter. The top layer is thick yet soft, slightly tangy from the addition of softened cream cheese, and sweetened with confectioner’s sugar. It’s unadorned and unadulterated pleasure in butter bar form…a testament to bakeries and pastry lovers everywhere that there is truly life after the cupcake.
