Actually the Ozarks had a cuisine, but it has been very hard hit many times in the last century, by things from the depression onward. Fast food commercialization hit it particularly hard because it's a low income area. It was and is similar to all the other lower Midwest and mountain south cuisine. Pies, ham,beef and chicken, garden vegetables, wild fish and game, home made bread and biscuits. Smoke houses and canning and pickling we're widly utilized. Native pe ans, wild greens, pawpaw and various other local plants were incorporated. It's there to be found, it just needs people dedicated to the cause. PS there are lots of nice people in the Ozarks too
