first, the big orange fry "recipe" was not stolen from the capitol. the recipe is as follows: potatoes, salt. end of recipe.

we use kennebec potatoes . the capitol hotel does not. that idea was "stolen" from a good friend of mine whose restaurant i had the privilege of working at in San francisco, Bacar. His name is robby lewis, and he is originally from little rock. he is the one that turned me onto kennebec potatoes.

No disrespect to the Capitol as I frequent that fine establishment a little too often to enjoy their incredible food and beverage, but to say that a fry recipe was "stolen" is absurd. There is nothing more to it than using quality potatoes, cutting them lengthwise and then frying them twice so they crisp up nicely.

I wanted to take a moment to reach out to you and offer to buy you and your family a meal at ZAZA on me. I know better than anyone that we slip sometimes. I know that sometimes we fail to deliver, but i also know that we have our great moments too. I want to make this up to you, and show you that our commitment to quality and making good food is our greatest concern.

I don't want this sound funny or insincere, but aside from keeping a roof over my families head, the only other thing i think about is the romaine in your salad, and what i can do to make it better.
